Viva La Medicina is our special release project where we bring you the rare, the unique and the coveted coffees that come through the roastery. We’ve got our hands on this lot from Colombia, which is a naturally processed aerobic coffee that’s been through a 45-hour fermentation process.

It’s of the San Bernardo variety, which is a type of Arabica coffee also known as Pache when it comes from Guatemala - which is where this type of coffee originated. There’s not many farmers growing this variety due to it being quite a low yield crop, but what it lacks in volume, it makes up for in deliciousness.

After being picked by hand, the coffee goes through a 45-hour aerobic fermentation process, enhancing all the intense fruity qualities, but maintaining the floral notes which are what give this coffee its nuance and complexity. Sounds wafty and pretentious, but when you try this one, you’ll know what we mean. A serious coffee, for serious drinkers. We have a very limited volume of this, so if you’re into it, get onboard early.
